This month my boyfriend and I have set a challenge to try and eat really healthy and at the end of the month, whoever has the best progress photo has to buy the other dinner. I’m probably going to loose because I LOVE food (especially sweet things, as you may have already noticed). However before we set this challenge I had been eating more chocolate than I should be, so I am finding myself craving chocolate a lot, especially when snapchats’ ‘Tastemade’ story had a segment on snickers bars last night…
This recipe is raw, vegan, GF, DF. It is very rich, so you don’t need a lot to satisfy your sweet tooth.
1 cup virgin coconut oil
1/2 cup cacao powder
1/4 cup 100% maple syrup
1 cup pre soaked medjool dates
3 Tbsp Agave Nectar
1 Tbsp Almond butter
1 Tbsp Peanut butter
2 Tbsp coconut oil
1 1/2 tsp Vanilla extract
1 cup dry roasted or raw peanuts.
- Place the chocolate ingredients into a food processor (or blender) until combined. Make sure you scrape down the sides a few times to ensure all of the ingredients are mixed thoroughly.
- Clean blender and do the same for the caramel ingredients.
- Mix the peanuts into the caramel.
- You can coat them however you want in whatever mould you want to use. I put the caramel into a muffin tin, then covered the top in chocolate. I then put into the freezer to set the chocolate. Once the chocolate was set I then popped them out and covered the other side in chocolate and left them to set in the fridge.
